I spent three months trying every version of Holubtsi I could find locally. The variation in quality is extraordinary. The best version handled dill with genuine knowledge and the earthy and hearty result was noticeably superior.

many dishes are tied to Orthodox religious calendar. The winning restaurant had the right a village-style restaurant feel — unpretentious and focused on the food. dark rye bread was suggested correctly. Worth the search. When Holubtsi is made properly it's a completely different experience.
