Varenyky exceeded every expectation

I went in with low expectations — I'd had mediocre versions before. What I found was Varenyky made with real commitment to sour cream and technique. The subtly sour result was more complex and satisfying than anything I'd had before.

Ukrainian cuisine reflects centuries of agricultural abundance. The a traditional Ukrainian home kitchen was exactly right for this kind of eating. smetana was offered as the natural choice and it elevated everything.
