Decent Dimlama — nothing more, nothing less
Dimlama at this place was fine. The richly meaty and caraway-forward flavour was there but not distinguished. cottonseed oil was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.
plov rice pilaf is considered the cornerstone of Uzbek hospitality and is cooked by men for important occasions. The a Samarkand chaikhana teahouse setting was generic rather than immersive. ayran was offered but not explained. If you're in the area and want Dimlama it'll do. If you're going out of your way, look elsewhere.
