Home cooking attempt — Mandocas from scratch

I spent an afternoon making Mandocas from scratch following a traditional recipe. Getting papelón brown sugar right was the main challenge — it's not as straightforward as it looks. The tropical and vibrant result was rewarding once I got it right.
