I spent three months trying every version of Pabellón Criollo I could find locally. The variation in quality is extraordinary. The best version handled Queso de mano fresh cheese with genuine knowledge and the tropical and vibrant result was noticeably superior.

hallacas Christmas preparation is a multi-day family tradition where the whole extended family participates. The winning restaurant had the right a Venezuelan diaspora restaurant abroad feel — unpretentious and focused on the food. Malta dark malt drink was suggested correctly. Worth the search. When Pabellón Criollo is made properly it's a completely different experience.
