Decent Qutab — nothing more, nothing less
Qutab at this place was fine. The richly layered flavour was there but not distinguished. dried sour plums was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Ingredient appreciation — what makes Qutab special
What sets Qutab apart is the handling of quince. In lesser versions this is treated as a background note. Here it's central and the sweet-sour from fruit result shows it. I've started buying it to cook with at home after this experience.

Restaurant review — Qutab that actually delivered
I'm sceptical of any restaurant claiming to do Qutab well, having been disappointed often enough. This one delivered. The aromatic with fresh herbs base was authentic and the use of chess herbs (dill, parsley, tarragon, mint) showed real knowledge.

Spice level warning — Qutab is not what I expected
I underestimated Qutab. The aromatic with fresh herbs description didn't prepare me for the reality. saffron brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Why Qutab deserves more attention
Qutab rarely gets the international recognition it deserves. The richly layered complexity is genuine, not simple, and the technique involved in using quince correctly takes real skill.
