First time trying Pão de Queijo — completely converted
I had never tried Pão de Queijo before this visit and I wasn't sure what to expect. The smoky and umami-deep taste hit immediately and made sense of the dish in a way descriptions never quite do. dried shrimp is an ingredient I'd not encountered used quite like this before.

Honest verdict on Pão de Queijo — good but not exceptional
Pão de Queijo here was solidly made — sweet from tropical fruits without anything to complain about. dende palm oil was present and handled reasonably. But something was missing from the depth that this dish should have.

Pão de Queijo exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Pão de Queijo made with real commitment to dende palm oil and technique. The smoky and umami-deep result was more complex and satisfying than anything I'd had before.

I'm sceptical of any restaurant claiming to do Pão de Queijo well, having been disappointed often enough. This one delivered. The rich and earthy base was authentic and the use of manioc flour farinha showed real knowledge.

Decent Pão de Queijo — nothing more, nothing less
Pão de Queijo at this place was fine. The robust and filling flavour was there but not distinguished. black beans was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Pão de Queijo as comfort food — exactly what I needed
Some dishes exist to comfort and Pão de Queijo is absolutely in that category. The smoky and umami-deep quality works on something almost primal — you feel the warmth of it immediately. fresh malagueta chilli does work that no substitute can replicate.
