Hot Pot as comfort food — exactly what I needed
Some dishes exist to comfort and Hot Pot is absolutely in that category. The aromatic and complex quality works on something almost primal — you feel the warmth of it immediately. Shaoxing wine does work that no substitute can replicate.

Decent Hot Pot — nothing more, nothing less
Hot Pot at this place was fine. The bold and numbing flavour was there but not distinguished. oyster sauce was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Hot Pot exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Hot Pot made with real commitment to fermented black bean and technique. The deeply savoury and sweet result was more complex and satisfying than anything I'd had before.

Spice level warning — Hot Pot is not what I expected
I underestimated Hot Pot. The deeply savoury and sweet description didn't prepare me for the reality. Shaoxing wine brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
