Having eaten Æbleskiver at several restaurants over the past year, I can say this version is the best. The clean and fermented quality is more pronounced here than anywhere else I've tried. fresh dill is handled with real knowledge — you can taste the difference.

Æbleskiver as comfort food — exactly what I needed
Some dishes exist to comfort and Æbleskiver is absolutely in that category. The bright and pickled quality works on something almost primal — you feel the warmth of it immediately. pickled herring does work that no substitute can replicate.

Pairing Æbleskiver correctly — a note on cold buttermilk
Most people overlook how much the right drink changes Æbleskiver. I ordered it with cold buttermilk and the bright and pickled elements of the dish sharpened considerably against the pairing. rye bread rugbrød in particular became more prominent in a good way.

I had never tried Æbleskiver before this visit and I wasn't sure what to expect. The buttery and rich taste hit immediately and made sense of the dish in a way descriptions never quite do. fresh dill is an ingredient I'd not encountered used quite like this before.

Spice level warning — Æbleskiver is not what I expected
I underestimated Æbleskiver. The bright and pickled description didn't prepare me for the reality. pickled herring brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
