Honest verdict on Ceviche — good but not exceptional
Ceviche here was solidly made — bright and satisfying without anything to complain about. mote hominy was present and handled reasonably. But something was missing from the depth that this dish should have.

Underwhelming Ceviche — expected more
I was looking forward to Ceviche here based on the reputation. The reality was disappointing. The earthy from corn character that makes this dish special was muted — either from shortcuts with mote hominy or from scaling up production at the expense of quality.

Home cooking attempt — Ceviche from scratch
I spent an afternoon making Ceviche from scratch following a traditional recipe. Getting culantro right was the main challenge — it's not as straightforward as it looks. The fresh and citrusy result was rewarding once I got it right.

Decent Ceviche — nothing more, nothing less
Ceviche at this place was fine. The earthy from corn flavour was there but not distinguished. culantro was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Comparing Ceviche across three restaurants — an honest verdict
I ate Ceviche at three different restaurants in the same week to compare. The results were illuminating. The use of culantro varied significantly — only one got it right. The fresh and citrusy profile should be consistent but interpretation differs widely.

Ceviche as comfort food — exactly what I needed
Some dishes exist to comfort and Ceviche is absolutely in that category. The subtly spiced and herbal quality works on something almost primal — you feel the warmth of it immediately. choclo corn does work that no substitute can replicate.

Ceviche for a dinner party — went down extremely well
I made Ceviche for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The subtly spiced and herbal profile was the main talking point — no one had quite experienced culantro used that way before.
