Some dishes exist to comfort and Sinigang is absolutely in that category. The deeply umami quality works on something almost primal — you feel the warmth of it immediately. patis fish sauce does work that no substitute can replicate.

Spice level warning — Sinigang is not what I expected
I underestimated Sinigang. The subtly sweet and sour description didn't prepare me for the reality. annatto seeds brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
