First time trying Malabi — completely converted
I had never tried Malabi before this visit and I wasn't sure what to expect. The sesame-rich and nutty taste hit immediately and made sense of the dish in a way descriptions never quite do. pomegranate seeds is an ingredient I'd not encountered used quite like this before.

Malabi exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Malabi made with real commitment to tahini and technique. The warmly spiced result was more complex and satisfying than anything I'd had before.

Traditional versus modern Malabi — which wins?
I've now had Malabi prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises Medjool dates in the way Israeli cuisine is shaped by Jewish diaspora traditions from across the world fused with local Levantine ingredients. The warmly spiced charact…

Why Malabi deserves more attention
Malabi rarely gets the international recognition it deserves. The sesame-rich and nutty complexity is genuine, not simple, and the technique involved in using silan date syrup correctly takes real skill.

Restaurant review — Malabi that actually delivered
I'm sceptical of any restaurant claiming to do Malabi well, having been disappointed often enough. This one delivered. The bright and fresh with herbs base was authentic and the use of silan date syrup showed real knowledge.

Underwhelming Malabi — expected more
I was looking forward to Malabi here based on the reputation. The reality was disappointing. The bright and fresh with herbs character that makes this dish special was muted — either from shortcuts with tahini or from scaling up production at the expense of quality.

Comparing Malabi across three restaurants — an honest verdict
I ate Malabi at three different restaurants in the same week to compare. The results were illuminating. The use of tahini varied significantly — only one got it right. The sweet and tangy profile should be consistent but interpretation differs widely.

Ingredient appreciation — what makes Malabi special
What sets Malabi apart is the handling of pomegranate seeds. In lesser versions this is treated as a background note. Here it's central and the warmly spiced result shows it. I've started buying it to cook with at home after this experience.

Spice level warning — Malabi is not what I expected
I underestimated Malabi. The sweet and tangy description didn't prepare me for the reality. pomegranate seeds brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
