I'm sceptical of any restaurant claiming to do Tonkatsu well, having been disappointed often enough. This one delivered. The delicate and precise base was authentic and the use of sake showed real knowledge.

Underwhelming Tonkatsu — expected more
I was looking forward to Tonkatsu here based on the reputation. The reality was disappointing. The delicate and precise character that makes this dish special was muted — either from shortcuts with fresh wasabi or from scaling up production at the expense of quality.

Most people overlook how much the right drink changes Tonkatsu. I ordered it with barley tea and the clean and umami-forward elements of the dish sharpened considerably against the pairing. mirin in particular became more prominent in a good way.

Spice level warning — Tonkatsu is not what I expected
I underestimated Tonkatsu. The subtly sweet and salty description didn't prepare me for the reality. sake brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
