Traditional versus modern Chiles Rellenos — which wins?
I've now had Chiles Rellenos prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises tomatillo in the way pre-Columbian ingredients like corn, beans, and chilli form the foundation. The bright and citrusy character is more pronounced and direct…

Cooking class experience — learning Chiles Rellenos properly
I took a cooking class specifically to learn how to make Chiles Rellenos correctly. The instructor explained why Mexican chocolate is used the way it is — something I'd never understood from just eating it. The bright and citrusy result when you make it yourself is different.

Underwhelming Chiles Rellenos — expected more
I was looking forward to Chiles Rellenos here based on the reputation. The reality was disappointing. The bright and citrusy character that makes this dish special was muted — either from shortcuts with masa harina or from scaling up production at the expense of quality.

Pairing Chiles Rellenos correctly — a note on Mexican lager with lime
Most people overlook how much the right drink changes Chiles Rellenos. I ordered it with Mexican lager with lime and the complex and layered with chilli elements of the dish sharpened considerably against the pairing. masa harina in particular became more prominent in a good way.

Decent Chiles Rellenos — nothing more, nothing less
Chiles Rellenos at this place was fine. The deeply aromatic flavour was there but not distinguished. masa harina was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Best Chiles Rellenos I've had — and I've tried a few
Having eaten Chiles Rellenos at several restaurants over the past year, I can say this version is the best. The bright and citrusy quality is more pronounced here than anywhere else I've tried. Mexican chocolate is handled with real knowledge — you can taste the difference.

Holiday memory — Chiles Rellenos that transported me back
I first ate Chiles Rellenos on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the deeply aromatic quality I remembered. masa harina was handled correctly — something most restaurants here get slightly wrong.

Home cooking attempt — Chiles Rellenos from scratch
I spent an afternoon making Chiles Rellenos from scratch following a traditional recipe. Getting Mexican chocolate right was the main challenge — it's not as straightforward as it looks. The bright and citrusy result was rewarding once I got it right.

Spice level warning — Chiles Rellenos is not what I expected
I underestimated Chiles Rellenos. The complex and layered with chilli description didn't prepare me for the reality. dried ancho chilli brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Honest verdict on Chiles Rellenos — good but not exceptional
Chiles Rellenos here was solidly made — bright and citrusy without anything to complain about. Mexican chocolate was present and handled reasonably. But something was missing from the depth that this dish should have.
