Comparing Pastilla across three restaurants — an honest verdict
I ate Pastilla at three different restaurants in the same week to compare. The results were illuminating. The use of preserved lemon varied significantly — only one got it right. The richly perfumed profile should be consistent but interpretation differs widely.

Pastilla as comfort food — exactly what I needed
Some dishes exist to comfort and Pastilla is absolutely in that category. The sweet and savoury together quality works on something almost primal — you feel the warmth of it immediately. argan oil does work that no substitute can replicate.

Cultural discovery through Pastilla
Pastilla opened a door into a cuisine I'd previously known almost nothing about. The sweet and savoury together flavours are unlike anything in my usual rotation and I mean that positively. hospitality rituals including mint tea service are integral to the food experience. Ingredient appreciation — what makes Pastilla special
What sets Pastilla apart is the handling of medjool dates. In lesser versions this is treated as a background note. Here it's central and the warmly spiced and aromatic result shows it. I've started buying it to cook with at home after this experience.

Honest verdict on Pastilla — good but not exceptional
Pastilla here was solidly made — warmly spiced and aromatic without anything to complain about. ras el hanout was present and handled reasonably. But something was missing from the depth that this dish should have.

Spice level warning — Pastilla is not what I expected
I underestimated Pastilla. The sweet and savoury together description didn't prepare me for the reality. harissa brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.

Decent Pastilla — nothing more, nothing less
Pastilla at this place was fine. The richly perfumed flavour was there but not distinguished. harissa was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.
