I'm sceptical of any restaurant claiming to do Dhindo well, having been disappointed often enough. This one delivered. The subtly numbing from timur base was authentic and the use of buckwheat showed real knowledge.

I spent an afternoon making Dhindo from scratch following a traditional recipe. Getting timur Sichuan pepper right was the main challenge — it's not as straightforward as it looks. The simply seasoned and clean result was rewarding once I got it right.

Decent Dhindo — nothing more, nothing less
Dhindo at this place was fine. The earthy and warming flavour was there but not distinguished. black lentils was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Dhindo exceeded every expectation
I went in with low expectations — I'd had mediocre versions before. What I found was Dhindo made with real commitment to black lentils and technique. The hearty and filling result was more complex and satisfying than anything I'd had before.

I was looking forward to Dhindo here based on the reputation. The reality was disappointing. The hearty and filling character that makes this dish special was muted — either from shortcuts with buckwheat or from scaling up production at the expense of quality.

Best Dhindo I've had — and I've tried a few
Having eaten Dhindo at several restaurants over the past year, I can say this version is the best. The subtly numbing from timur quality is more pronounced here than anywhere else I've tried. dried yak cheese is handled with real knowledge — you can taste the difference.

Dhindo as comfort food — exactly what I needed
Some dishes exist to comfort and Dhindo is absolutely in that category. The subtly numbing from timur quality works on something almost primal — you feel the warmth of it immediately. mustard oil does work that no substitute can replicate.
