The Chilli Crab I grew up eating — memory as a review
I grew up eating Chilli Crab and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the fragrant and layered was right, coconut milk was handled the way it should be.

Pairing Chilli Crab correctly — a note on Tiger beer
Most people overlook how much the right drink changes Chilli Crab. I ordered it with Tiger beer and the fragrant and layered elements of the dish sharpened considerably against the pairing. lemongrass in particular became more prominent in a good way.

Home cooking attempt — Chilli Crab from scratch
I spent an afternoon making Chilli Crab from scratch following a traditional recipe. Getting sambal belacan paste right was the main challenge — it's not as straightforward as it looks. The richly coconut-sweet result was rewarding once I got it right.

Honest verdict on Chilli Crab — good but not exceptional
Chilli Crab here was solidly made — complex and fiery without anything to complain about. lemongrass was present and handled reasonably. But something was missing from the depth that this dish should have.

First time trying Chilli Crab — completely converted
I had never tried Chilli Crab before this visit and I wasn't sure what to expect. The complex and fiery taste hit immediately and made sense of the dish in a way descriptions never quite do. lemongrass is an ingredient I'd not encountered used quite like this before.
