First time trying Jamón Ibérico — completely converted
I had never tried Jamón Ibérico before this visit and I wasn't sure what to expect. The briny and complex taste hit immediately and made sense of the dish in a way descriptions never quite do. smoked paprika is an ingredient I'd not encountered used quite like this before.

I took a cooking class specifically to learn how to make Jamón Ibérico correctly. The instructor explained why Manchego cheese is used the way it is — something I'd never understood from just eating it. The briny and complex result when you make it yourself is different.

Jamón Ibérico as comfort food — exactly what I needed
Some dishes exist to comfort and Jamón Ibérico is absolutely in that category. The deeply aromatic quality works on something almost primal — you feel the warmth of it immediately. smoked paprika does work that no substitute can replicate.

The best Jamón Ibérico I've ever had came from a street stall, not a restaurant. The smoky and savoury intensity was completely different — more direct and uncompromised. saffron was used without hesitation, the way it should be.
