Paella as comfort food — exactly what I needed
Some dishes exist to comfort and Paella is absolutely in that category. The briny and complex quality works on something almost primal — you feel the warmth of it immediately. Jamón Ibérico does work that no substitute can replicate.

Best Paella I've had — and I've tried a few
Having eaten Paella at several restaurants over the past year, I can say this version is the best. The briny and complex quality is more pronounced here than anywhere else I've tried. Manchego cheese is handled with real knowledge — you can taste the difference.

Spice level warning — Paella is not what I expected
I underestimated Paella. The rich with olive oil description didn't prepare me for the reality. saffron brings a heat or pungency that builds steadily rather than hitting upfront. By halfway through I was sweating but couldn't stop eating.
