Com Tam for a dinner party — went down extremely well
I made Com Tam for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The subtly sweet and spiced profile was the main talking point — no one had quite experienced fresh mint and coriander used that way before.

Ingredient appreciation — what makes Com Tam special
What sets Com Tam apart is the handling of lemongrass. In lesser versions this is treated as a background note. Here it's central and the fresh with citrus and mint result shows it. I've started buying it to cook with at home after this experience.

Cultural discovery through Com Tam
Com Tam opened a door into a cuisine I'd previously known almost nothing about. The fresh with citrus and mint flavours are unlike anything in my usual rotation and I mean that positively. fresh herbs added at the table are a defining characteristic. Com Tam as comfort food — exactly what I needed
Some dishes exist to comfort and Com Tam is absolutely in that category. The fresh with citrus and mint quality works on something almost primal — you feel the warmth of it immediately. fish sauce does work that no substitute can replicate.

Restaurant review — Com Tam that actually delivered
I'm sceptical of any restaurant claiming to do Com Tam well, having been disappointed often enough. This one delivered. The light and herbal base was authentic and the use of star anise broth showed real knowledge.

Pairing Com Tam correctly — a note on fresh sugarcane juice
Most people overlook how much the right drink changes Com Tam. I ordered it with fresh sugarcane juice and the light and herbal elements of the dish sharpened considerably against the pairing. lemongrass in particular became more prominent in a good way.

Comparing Com Tam across three restaurants — an honest verdict
I ate Com Tam at three different restaurants in the same week to compare. The results were illuminating. The use of lemongrass varied significantly — only one got it right. The light and herbal profile should be consistent but interpretation differs widely.
