Arrived with low expectations, left completely converted

Three weeks is long enough to get past the tourist surface in Poland. The first week I was in Kraków and the big sites like Old Town Warsaw. The second and third I went further and slower. The food evolution was interesting — bigos everywhere but prepared so differently by region.
